Did Hell's Canyon of the Snake two weekends ago. Really fun 3-4 whitewater and an awesome canyon. Its about 32 miles but is pretty swift so you could do it one night and two full days (although some awesome hiking and scenery make an additional night worthwhile). Always flowing and free permits in the offseason but it will probably start to get pretty cold soon.

get a sea kayak

yeah sure, it usually isn't as exciting as whitewater kayaking... but you can hold enough gear/food for 2-3 weeks of kayaking, (there wont be enough room for that much beer, but you can plan your trips around harbors that sell beer)
and you can do like 20+ miles a day if desired.

i support the self-support whitewater kayaking too, but the options are limited.

i did some salt water yaking on the coast last fall, and that the tits.  surfing little swells in a 17ft fiberglass yak was definitely adrenaline pumping and warranted a helmet for sure

boom, sea kayaking happens
